PIMENT CARI- STUFFED LONG PEPPERS

This is one of DH's faves.

long green chillies or peppers cut on one side diagonally, remove seeds & soak in salt water for an hour.
250g gram flour
1 large finely chopped onion
1 small tin tuna or fresh cooked flaked fish
3 boiled potatoes, peeled & mashed
thyme, parsley to taste
salt, pepper

1) Fry onions in butter, add tuna or fish & herbs.Cook for a few minutes & then add the mashed potatoes. Check salt & pepper.Cook till dry. Cool.
2) When the stuffing is cold, stuff into the long peppers & set aside.
3) To the gram flour, add water to make a paste making sure it's not too watery.
4) Dip each pepper into this paste & deep fry till brown. Serve hot
